Job Description

A respected, locally established restaurant group is appointing a Senior Executive Chef to take full ownership of its culinary operations across two established locations and a new opening scheduled in the UAE.

This is a high-impact leadership position for a hands-on culinary executive with strong operational depth, capable of managing multi-unit, high-volume kitchens while delivering consistent quality, performance, and brand standards. The role requires a seasoned professional with a strong command of Italian and Mediterranean cuisine, excellent people leadership, and the ability to scale operations without compromising execution or guest experience.

As Executive Chef, you will define and lead the culinary direction of TBK Restaurants, ensuring excellence across menu development, kitchen operations, team leadership, financial performance, and compliance. You will work closely with senior management to support growth, new openings, and long-term brand development.

Responsibilities

Culinary Direction & Menu Strategy

  • Set and drive the overall culinary vision across all outlets.
  • Design, refine, and standardize menus aligned with brand identity.
  • Ensure authenticity and excellence in Italian and Mediterranean cuisine.
  • Introduce seasonal menus, specials, and new concepts while maintaining consistency.
  • Oversee recipe development, costing, and kitchen SOPs.
  • Guarantee consistent quality, presentation, and taste standards.

Multi-Unit Kitchen Operations

  • Oversee daily kitchen operations across all branches.
  • Ensure seamless coordination between prep, production, and service kitchens.
  • Standardize workflows, systems, and operational procedures.
  • Monitor food preparation, portion control, and service timing.
  • Lead kitchen setup and operational readiness for new openings.

Team Leadership & Development

  • Recruit, train, and lead kitchen teams across all outlets.
  • Build a culture of discipline, accountability, and teamwork.
  • Deliver ongoing training on techniques, menus, and operational standards.
  • Implement performance reviews, development plans, and succession planning.
  • Manage staffing levels, scheduling, and productivity.
  • Promote strong collaboration between BOH and FOH teams.

Financial Performance & Cost Control

  • Control food costs, labor costs, and kitchen budgets.
  • Manage recipe costing, yield optimization, and waste reduction.
  • Oversee procurement, supplier relationships, and inventory systems.
  • Review P&L performance and implement cost-efficiency strategies.
  • Drive profitability while protecting quality and guest satisfaction.

Food Safety, Hygiene & Compliance

  • Ensure full compliance with UAE food safety regulations and HACCP standards.
  • Maintain the highest levels of hygiene, cleanliness, and sanitation.
  • Conduct regular kitchen audits and corrective action plans.
  • Ensure proper storage, labeling, temperature control, and traceability.
  • Lead health inspections and compliance reporting.

Quality Control & Brand Consistency

  • Maintain consistent food quality and presentation across all outlets.
  • Conduct regular kitchen visits and operational reviews.
  • Uphold brand standards during peak periods and high-volume service.
  • Review guest feedback and continuously improve culinary performance.

Strategic & Business Support

  • Partner with senior management on expansion and growth strategies.
  • Support concept development for new openings and future projects.
  • Participate in forecasting, planning, and operational reviews.
  • Represent the brand as a culinary ambassador when required.

Job Requirements

Experience & Background

  • Currently based in the UAE or immediately available locally
  • 10–15+ years of professional culinary experience, including multi-unit oversight
  • Proven experience in high-volume, fast-paced restaurant environments
  • Strong expertise in Italian and Mediterranean cuisine
  • Track record of leading large kitchen teams and scaling operations
  • Experience with upscale casual or premium dining concepts
  • Demonstrated success in restaurant openings and brand growth

Skills & Qualifications

  • Strong leadership presence with a hands-on approach
  • Excellent organizational, communication, and problem-solving skills
  • Ability to manage pressure and multiple outlets simultaneously
  • In-depth knowledge of kitchen systems, equipment, and modern techniques
  • Professional culinary qualification or diploma (preferred)
  • HACCP / Food Safety certification (mandatory)
  • Additional management or leadership training is an advantage
  • Commercially minded with strong business awareness
  • Passionate, creative, disciplined, and detail-oriented
  • Team-focused leader who develops and inspires talent

Working Conditions

Salary

AED 50,000 – 60,000 per month
