Job Description

A new 400 m² bistro and boulangerie concept is preparing to open in one of Cairo’s prestigious locations and is seeking an accomplished Executive Chef to take full culinary leadership of the project.

The venue will offer breakfast, lunch and dinner, with approximately 120 to 150 covers, including a terrace. The successful candidate will join during the pre-opening phase and play a central role in shaping the culinary identity, building the kitchen operation and establishing the standards that will define the restaurant from opening onwards.

This is a senior leadership opportunity for an internationally experienced chef who combines culinary creativity with strong operational and commercial expertise and is comfortable taking a new restaurant concept from development through launch and into its ongoing operation.

The Role

Working closely with ownership, the Executive Chef will have overall responsibility for the culinary operation, from menu development and kitchen design through recruitment, training, supplier management, costing and daily service.

The kitchen team will include specialist culinary positions such as a Chef Pâtissier, Chef Boulanger and Pizzaiolo, requiring a strong leader capable of coordinating different areas of production while maintaining a consistent culinary vision.

Responsibilities

Culinary Direction

  • Develop the complete culinary concept for breakfast, lunch and dinner.
  • Create menus that reflect the identity and positioning of the new bistro and boulangerie.
  • Establish recipes, preparation methods, presentation standards and kitchen procedures.
  • Ensure consistency in taste, quality and execution across every service.
  • Work closely with the specialist pastry, bakery and pizza teams to create a cohesive offering.
  • Lead tastings, menu development sessions and final recipe testing ahead of opening.

Pre-Opening & Launch

  • Take ownership of the culinary pre-opening programme.
  • Establish kitchen systems, procedures and production standards.
  • Assist with kitchen set-up and operational preparation.
  • Recruit and build the culinary brigade in collaboration with ownership.
  • Train and mentor team members before opening.
  • Organise tastings and trial services.
  • Identify and resolve operational issues before launch.
  • Lead the kitchen through the opening period and establish efficient day-to-day operations.

Kitchen Management

  • Lead and motivate the entire kitchen brigade.
  • Manage the Chef Pâtissier, Chef Boulanger, Pizzaiolo and wider culinary team.
  • Establish clear responsibilities, standards and working procedures.
  • Monitor daily preparation and service.
  • Maintain consistently high standards of food quality and presentation.
  • Develop a professional, disciplined and collaborative kitchen culture.

Purchasing & Financial Management

  • Oversee ingredient sourcing and supplier selection.
  • Develop strong relationships with key suppliers.
  • Negotiate and monitor purchasing where appropriate.
  • Establish accurate recipe costing and food-cost controls.
  • Monitor stock levels, waste and inventory.
  • Manage kitchen-related budgets in coordination with ownership.
  • Contribute to P&L management and ensure the culinary operation remains commercially sustainable.

Quality, Hygiene & Compliance

  • Maintain rigorous food hygiene and kitchen safety standards.
  • Ensure all kitchen procedures meet applicable operational requirements.
  • Monitor food storage, preparation and handling.
  • Implement systems that support consistent quality and minimise waste.
  • Carry out regular checks of equipment, production areas and working practices.

Job Requirements

The ideal candidate will be an internationally experienced Executive Chef with a strong background in high-end restaurants, luxury hospitality or sophisticated dining concepts.

The position requires someone who can combine a high level of culinary expertise with genuine leadership and commercial awareness.

Key requirements include:

  • Extensive international experience at Executive Chef or equivalent senior level.
  • Strong background in high-end restaurants or luxury hospitality.
  • Proven ability to lead and develop sizeable culinary teams.
  • Experience launching or opening a new restaurant is highly desirable.
  • Strong menu-development and recipe-creation skills.
  • Excellent understanding of food costing, purchasing and inventory control.
  • Solid commercial and operational understanding.
  • Ability to establish systems and standards from the ground up.
  • Strong leadership, communication and team-building skills.
  • Ability to work closely with ownership and translate a vision into a successful culinary operation.
  • High standards of hygiene, organisation and consistency.
  • Fluent English is essential.
  • Arabic is not required.

The successful candidate should be prepared to relocate to Cairo ahead of the opening, with the anticipated start period following Ramadan 2027.

US$120,000–180,000 gross per year or €80,000–120,000 gross per year
